UAS Dharwad, IIT Dharwad collaborate on space food study

Dharwad, June 27 (UNI) In a significant step towards enhancing nutrition options for astronauts during space missions, the University of Agricultural Sciences (UAS) Dharwad and the Indian Institute of Technology (IIT) Dharwad have jointly launched a study to assess the viability of sprouting grains in space.
The collaborative research focuses on green gram and peanuts, evaluating their nutritional quality and microbial safety when sprouted in microgravity conditions.
“This is part of a larger mission or ‘abhiyan’ aiming at developing sustainable, nutritious food options for astronauts. During space journeys, astronauts soak the grains for sprouting, then store the sprouted grains at minus 40°C until their return to Earth,” Dharwad University of Agricultural Sciences and IIT Vice-Chancellor Dr PL Patil explained.
Once the astronauts return, the sprouted samples are rigorously tested for three key parameters: nutritional quality, microbial contamination, and comparison with Earth-sprouted grains.
Preliminary results indicate no significant difference in nutritional quality or microbial safety between space-sprouted and Earth-sprouted grains. “If this holds consistently, the method can be safely recommended for use during long-duration space travel,” the official added.
The findings could play a crucial role in future interplanetary missions where fresh, space-grown food is vital for crew health and mission sustainability.
